Heirloom Tomato & Burrata Salad

Ingredients (serves 2–4):

  • 3 - 4 heirloom tomatoes (a mix of colours and sizes)

  • 1 ball of fresh burrata

  • Extra virgin olive oil

  • Balsamic glaze or aged balsamic vinegar (optional)

  • Lemon

  • Fresh basil leaves (chopped finely)

  • Flaky sea salt

  • Freshly cracked black pepper

  • Toasted pine nuts or walnuts for crunch (optional)

Method:

  1. Slice the tomatoes into wedges or thick slices. Arrange them on a platter or bowl, mixing colours for a beautiful presentation.
  2. Tear the burrata gently in the centre so the creamy middle spills out over the tomatoes, or you can leave whole to serve.
  3. Drizzle generously with olive oil, and if desired, a touch of balsamic glaze.
  4. Season with flaky salt and freshly cracked pepper.
  5. Squeeze fresh lemon juice over salad.
  6. Finish with basil - scatter fresh leaves across the platter.
  7. Serve with anything and everything!
